Desi Foods: Chicken Curry AKA Chicken Stew Recipe
Chicken curry, also known as chicken stew, is a dish that transcends borders and culinary traditions. Found in various forms across the globe, it's a testament to the versatility of chicken as a protein and the love for aromatic spices. In this blog post, we'll explore a classic and comforting chicken curry recipe that you can easily prepare in your own kitchen.
Ingredients:
For Marination:
500g chicken pieces (bone-in or boneless)
1 cup plain yogurt
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
Salt to taste
For the Curry:
2 tablespoons oil
2 onions, finely chopped
2 tomatoes, finely chopped
1 green chili, slit lengthwise (adjust to your spice preference)
1 teaspoon cumin seeds
1 cinnamon stick
3-4 green cardamom pods
3-4 cloves
1 bay leaf
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Marinating the Chicken:
In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt.
Add the chicken pieces to the marinade, ensuring they are evenly coated. Allow the chicken to marinate for at least 30 minutes, but longer marination enhances the flavour.
Cooking the Curry:
Heat oil in a large, heavy-bottomed pan over medium heat.
Add cumin seeds, cinnamon sticks, green cardamom pods, cloves, and bay leaf. Sauté for a minute until they release their aromas.
Add the chopped onions and cook until they turn golden brown.
Stir in the tomatoes and green chili. Cook until the tomatoes soften, and the oil starts to separate, which takes about 10-15 minutes.
Add the coriander powder, cumin powder, garam masala, and salt. Cook for a few more minutes, allowing the spices to meld into the tomato-onion mixture.
Add the marinated chicken pieces and cook until they turn white and lose their pink colour.
Pour enough water to cover the chicken. Reduce the heat, cover the pan, and simmer until the chicken is tender and fully cooked, which will take about 20-25 minutes. You can adjust the consistency of the curry by adding more water if needed.
Garnish with fresh coriander leaves.
