A Classic Lamb Shank Recipe

Lamb shanks, with their tender, fall-off-the-bone meat and rich flavours, are a beloved delicacy in many cuisines worldwide. When cooked slowly, these shanks become an irresistible dish that's perfect for special occasions or when you want to create a heartwarming meal. In this blog post, we’ll explore a classic lamb shank recipe that elevates this cut of meat into a culinary masterpiece.

Ingredients:

1. Lamb Shanks: 4 lamb shanks (about 12-16 ounces each), preferably with the bone-in for added flavour.

2. Olive Oil: 2 tablespoons.

3. Onion: 1 large onion, finely chopped.

4. Carrots: 2 carrots, peeled and diced.

5. Celery: 2 stalks of celery, diced.

6. Garlic: 4 cloves garlic, minced.

7. Tomato Paste: 2 tablespoons.

8. Beef or Lamb Stock: 4 cups.

9. Fresh Herbs: A few sprigs each of rosemary, thyme, and bay leaves.

10. Salt and Pepper: To taste.

Instructions:

1. Preparing the Lamb Shanks:

  • Preheat your oven to 325°F (160°C).
  • Pat dry the lamb shanks with paper towels and season them generously with salt and pepper.
2. Searing the Lamb Shanks:

  • Heat olive oil in a large, oven-safe pot or Dutch oven over medium-high heat.
  • Sear the lamb shanks until they're nicely browned on all sides. This step adds depth to the dish.
3. Creating the Base:

  • Remove the seared lamb shanks and set them aside.
  • In the same pot, add chopped onions, carrots, and celery. Sauté until they begin to soften and turn golden.
  • Stir in the minced garlic and tomato paste, cooking for a minute until fragrant.
4. Deglazing and Simmering:

  • Pour in the stock and allow it to reduce, scraping up any brown bits from the bottom of the pot for added flavour.
  • Return the lamb shanks to the pot.
5. Adding Aromatics and Braising:

  • Tie the fresh herbs together with kitchen twine and place them in the pot.
  • Cover the pot and transfer it to the preheated oven.
6. Braising the Lamb Shanks:

  • Allow the lamb shanks to braise in the oven for about 2.5 to 3 hours or until the meat is tender and almost falling off the bone.
7. Rest and Serve:

  • Carefully remove the pot from the oven and take out the lamb shanks.
  • Let the shanks rest for a few minutes before serving to allow the flavours to settle.
Serving Suggestions:

  • Serve the lamb shanks over mashed potatoes, polenta, or couscous.
  • Spoon the aromatic vegetables and sauce over the shanks for a flavourful finish.

Tips and Variations:

  • For extra tenderness, braise the lamb shanks for a longer period at a lower temperature.
  • Experiment with different herbs and spices to tailor the flavours to your preference.
  • To intensify the sauce, strain the liquid and reduce it on the stovetop to a desired consistency.

This classic lamb shank recipe is an indulgent and deeply satisfying dish that’s perfect for elegant dinners or cozy gatherings. With a few simple ingredients and a bit of patience, you'll craft a meal that's sure to impress. Whether it's a family celebration or a special dinner for two, this delightful dish will undoubtedly be the centrepiece of the table, inviting everyone to savour the rich flavours of tender lamb shanks.
