Ingredients:
Jackfruit
(Kathal): 500 grams, unripe and cut into chunks.
Basmati
Rice: 2 cups, soaked for 30 minutes.

1 cup.
Ginger-Garlic
Paste: 2 tablespoons.

Chilies: 2-3, slit.
Biryani
Masala: 2 tablespoons (or adjust to taste).

Powder: 1/2 teaspoon.
Red
Chili Powder: 1 teaspoon (adjust to taste).
Coriander
Powder: 1 tablespoon.
Mint
Leaves: Handful, chopped.

Ghee:
4 tablespoons.

Instructions:

Preparing the Jackfruit:
Boil
the jackfruit chunks with a little salt until they're tender but not mushy.
Drain and set aside.

Cooking the Rice:
In
a large pot, bring water to a boil. Add soaked rice and cook until it's 70-80%
done. Drain and keep aside.
