Ingredients:


  • Lamb (or Goat) Meat: 750 grams, cut into chunks.
  • Yogurt: 1 cup, whisked until smooth.
  • Onions: 2 large, finely sliced.
  • Tomatoes: 2, finely chopped or pureed.
  • Ginger-Garlic Paste: 2 tablespoons.
  • Red Chili Powder: 1 teaspoon (adjust to taste).
  • Fennel Powder: 1 tablespoon.
  • Dried Ginger Powder (Sonth): 1/2 teaspoon.
  • Kashmiri Red Chili Paste: 2 tablespoons.
  • Turmeric Powder: 1/2 teaspoon.
  • Cinnamon Stick: 1-inch stick.
  • Green Cardamom: 4-5 pods.
  • Cloves: 4-5.
  • Bay Leaf: 1-2 leaves.
  • Saffron Strands: A pinch, soaked in 2 tablespoons warm milk.
  • Ghee: 3-4 tablespoons.
  • Oil: 2 tablespoons.
  • Salt: To taste.


Instructions:


1. Marinating the Meat:

  • In a bowl, marinate the meat with half of the ginger-garlic paste, whisked yogurt, and a pinch of salt. Allow it to marinate for at least an hour for the flavours to infuse.


2. Sautéing the Onions:

  • Heat ghee and oil in a heavy-bottomed pan. Add sliced onions and cook until they turn golden brown.


3. Adding Whole Spices:

  • Add cinnamon stick, green cardamom, cloves, and bay leaf to the browned onions. Sauté for a minute until fragrant.


4. Incorporating Spices and Paste:

  • Add the remaining ginger-garlic paste and sauté until the raw aroma fades.
  • Stir in the red chili powder, fennel powder, dried ginger powder, and Kashmiri red chili paste. Cook for a minute.


5. Cooking the Marinated Meat:

  • Add the marinated meat and tomatoes. Cook on medium heat, stirring occasionally, until the meat is sealed.


6. Simmering and Infusing:

  • Pour in water to cover the meat and bring it to a gentle boil. Lower the heat and cover the pan. Let it simmer until the meat is tender and the gravy thickens.
